Hearty Beef and Rice Casserole with Cheese

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional, adds a mild smoky flavor)
  • 1 cup shredded cheddar cheese (or any melty cheese you like)
  • ½ cup sour cream (optional, for added creaminess)
  • 1 tbsp fresh chopped parsley (for garnish)

🔪 Instructions

1. Preheat & Prepare

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Cook the Beef

  • In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked and the onion is soft.
  • Add the minced garlic and sauté for another 30–60 seconds.
  • Drain any excess fat.

3. Combine Ingredients

  • Stir in the uncooked rice, beef broth, diced tomatoes (with juices), Worcestershire sauce, salt, pepper, and paprika.
  • Mix well to combine.

4. Bake the Casserole

  • Pour the mixture into your prepared baking dish.
  • Cover tightly with foil and bake for 45 minutes, or until the rice is tender and most of the liquid is absorbed.

5. Add Cheese & Finish

  • Carefully remove the foil. Stir in sour cream (if using) for extra richness.
  • Sprinkle the top evenly with shredded cheddar cheese.
  • Return to the oven and bake uncovered for another 10 minutes, until the cheese is melted and bubbly.

6. Garnish & Serve

  • Remove from oven and let rest for 5 minutes.
  • Sprinkle with chopped parsley before serving.
