Georgia Cracker Salad is a beloved Southern dish that proves how a few humble ingredients can create something truly delicious. Made with fresh tomatoes, hard-boiled eggs, and saltine crackers all tossed in a creamy mayonnaise dressing, it’s a refreshing salad with a surprising crunch. Perfect for picnics, potlucks, or as a side dish for fried chicken or barbecue, it’s as Southern as it gets.
Ingredients (Serves 4–6)
- 1 sleeve saltine crackers, coarsely crushed
- 2 medium ripe tomatoes, diced
- 3 hard-boiled eggs, chopped
- ½ cup green onions, chopped
- ¾ cup mayonnaise (Duke’s is traditional)
- Salt & freshly ground black pepper, to taste
Instructions
- Prep vegetables: Dice tomatoes and chop green onions. Peel and chop boiled eggs.
- Mix salad base: In a large bowl, combine tomatoes, eggs, and green onions.
- Add mayonnaise: Stir in mayonnaise until everything is well coated.
- Add crackers last: Just before serving, fold in crushed saltine crackers so they stay crunchy.
- Season & serve: Add salt and pepper to taste. Serve immediately for best texture.
Tips & Variations
- Use cherry tomatoes for extra sweetness.
- Add bacon bits or diced ham for a heartier version.
- Swap saltines for buttery Ritz crackers for a different flavor.
- If making ahead, mix everything except the crackers — fold them in just before serving to avoid sogginess.
Enjoy !!
