Georgia Cracker Salad

Georgia Cracker Salad is a beloved Southern dish that proves how a few humble ingredients can create something truly delicious. Made with fresh tomatoes, hard-boiled eggs, and saltine crackers all tossed in a creamy mayonnaise dressing, it’s a refreshing salad with a surprising crunch. Perfect for picnics, potlucks, or as a side dish for fried chicken or barbecue, it’s as Southern as it gets.

Ingredients (Serves 4–6)

  • 1 sleeve saltine crackers, coarsely crushed
  • 2 medium ripe tomatoes, diced
  • 3 hard-boiled eggs, chopped
  • ½ cup green onions, chopped
  • ¾ cup mayonnaise (Duke’s is traditional)
  • Salt & freshly ground black pepper, to taste

Instructions

  1. Prep vegetables: Dice tomatoes and chop green onions. Peel and chop boiled eggs.
  2. Mix salad base: In a large bowl, combine tomatoes, eggs, and green onions.
  3. Add mayonnaise: Stir in mayonnaise until everything is well coated.
  4. Add crackers last: Just before serving, fold in crushed saltine crackers so they stay crunchy.
  5. Season & serve: Add salt and pepper to taste. Serve immediately for best texture.

Tips & Variations

  • Use cherry tomatoes for extra sweetness.
  • Add bacon bits or diced ham for a heartier version.
  • Swap saltines for buttery Ritz crackers for a different flavor.
  • If making ahead, mix everything except the crackers — fold them in just before serving to avoid sogginess.

Enjoy !!
