Ingredients
- 1 cup butter
- ½ cup brown sugar
- 1 teaspoon vanilla
- 3 cups quick oats
- 1 cup semisweet chocolate chips
- ½ cup peanut butter (optional but delicious)
Instructions
- In a saucepan, melt butter and brown sugar over medium heat until smooth.
- Stir in vanilla and oats. Cook 2–3 minutes until oats soften.
- Press half the oat mixture into a parchment-lined 8×8 or 9×9 pan.
- In another bowl, melt chocolate chips (and peanut butter if using).
- Spread melted chocolate over the oat layer.
- Top with remaining oat mixture, gently pressing down.
- Chill 2 hours or until firm.
- Slice into bars and enjoy!
