No Bake Chocolate Oat Bars

Ingredients

  • 1 cup butter
  • ½ cup brown sugar
  • 1 teaspoon vanilla
  • 3 cups quick oats
  • 1 cup semisweet chocolate chips
  • ½ cup peanut butter (optional but delicious)

Instructions

  1. In a saucepan, melt butter and brown sugar over medium heat until smooth.
  2. Stir in vanilla and oats. Cook 2–3 minutes until oats soften.
  3. Press half the oat mixture into a parchment-lined 8×8 or 9×9 pan.
  4. In another bowl, melt chocolate chips (and peanut butter if using).
  5. Spread melted chocolate over the oat layer.
  6. Top with remaining oat mixture, gently pressing down.
  7. Chill 2 hours or until firm.
  8. Slice into bars and enjoy!
