Coconut Butter Bars

Rich, chewy, buttery coconut bars just like the ones Grandma made.

Ingredients

For the crust:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the coconut topping:

  • 3 large eggs
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup all-purpose flour
  • 2 cups sweetened shredded coconut

🥥 How to Make Coconut Butter Bars

1. Make the crust

  • Preheat oven to 350°F (180°C).
  • Line a 9×13-inch pan with parchment paper.
  • In a bowl, beat butter + sugar until creamy.
  • Add flour, salt, vanilla — mix until a dough forms.
  • Press dough evenly into the pan.
  • Bake 15 minutes until edges are lightly golden.

2. Prepare the coconut topping

  • In another bowl, whisk eggs + sugar together.
  • Add vanilla, salt, flour, then fold in the shredded coconut.
  • Pour this mixture over the warm crust.

3. Bake the bars

  • Return to the oven and bake 25–28 minutes, until top is golden and edges are set.
  • Cool completely before cutting into squares.
  • For extra flavor: sprinkle warm bars with a little extra coconut on top.

Tips for Perfect Bars

  • Chill before slicing for cleaner edges.
  • Add ½ cup white chocolate chips for bakery-style richness.
  • Want chewy? Slightly underbake.
  • Want crisp edges? Bake 3–4 minutes extra.
