Nothing feels more like Christmas morning than waking up to a hot, bubbly breakfast casserole coming out of the oven. This classic American holiday dish is hearty, comforting, and perfect for feeding a crowd. With sausage, eggs, cheese, and soft bread cubes baked to golden perfection, it delivers all the flavors of a cozy brunch in one simple pan — and you can prepare it the night before.
Ingredients
- 1 lb breakfast sausage (pork or turkey)
- 6 large eggs
- 2 cups whole milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 6 cups cubed bread (French bread or sandwich bread)
- 1 ½ cups shredded cheddar cheese
- ½ cup shredded mozzarella (optional)
- ½ cup chopped green onions (optional)
- 1 red bell pepper, diced (optional – adds color for Christmas!)
Instructions
1. Cook the sausage
Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain excess fat and let it cool slightly.
2. Prep the casserole base
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until smooth.
3. Layer everything in the baking dish
Grease a 9×13-inch casserole dish.
Add bread cubes, cooked sausage, bell pepper, and half of the cheese.
Pour the egg mixture evenly over the top. Press gently with a spatula to help the bread absorb the liquid.
4. Chill overnight (optional but best)
Cover with foil and refrigerate 8–12 hours.
This makes the casserole unbelievably soft and flavorful.
5. Bake
Preheat oven to 350°F (175°C).
Bake uncovered for 45–55 minutes, or until the top is golden and the center is set.
Add remaining cheese during the last 10 minutes for a melty finish.
6. Serve warm
Let rest for 10 minutes before slicing. Serve with fruit salad, cinnamon rolls, or holiday coffee.
