A beloved Midwest/Southern classic — tender “mock chicken” skewers baked to perfection.

Ingredients
- 1 lb cubed pork (or mix pork + veal), 1 to 1½-inch chunks
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons milk
- 1 cup seasoned breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt & pepper to taste
- 2–3 tablespoons olive oil or melted butter
- 8–10 wooden skewers
Instructions
1. Preheat & Prep
Preheat oven to 375°F (190°C).
Soak wooden skewers in warm water for 10 minutes so they don’t burn.
2. Build the Skewers
Thread 3–4 meat cubes per skewer, pressing them tight so they look like “drumsticks.”
3. Coat the Meat
Prepare 3 bowls:
- Flour with salt, pepper, paprika, garlic & onion powder.
- Eggs + milk (whisked).
- Breadcrumbs.
Dip each skewer in:
Flour → Egg → Breadcrumbs.
4. Brown (Optional but Best!)
Heat a little oil in a skillet and brown each skewer for 1–2 minutes per side for a crispy exterior.
5. Bake
Place skewers in a greased baking dish.
Drizzle with melted butter or a little oil.
Cover with foil and bake 30 minutes, then uncover and bake 15 minutes more until golden.
