Ingredients
- 2 large chicken breasts, finely chopped
- 1 cup shredded mozzarella cheese
- 2 large eggs
- ¼ cup mayonnaise
- ⅓ cup all-purpose flour
- 2 tablespoons chopped fresh parsley (optional)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt & black pepper to taste
- Oil for frying (vegetable or canola)
Instructions
In a mixing bowl, combine the chopped chicken, shredded mozzarella, eggs, mayonnaise, flour, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix until the batter is thick and sticky.
Heat oil in a skillet over medium heat. Scoop spoonfuls of the chicken mixture and place them gently into the hot oil. Flatten slightly with the back of the spoon. Fry for 3–4 minutes per side, or until golden brown and fully cooked inside.
Remove and place on paper towels to absorb any excess oil. Serve warm with ranch, spicy mayo, or honey mustard.
Tips
These fritters are extra juicy when you chop the chicken by hand instead of grinding it. Letting the mixture rest for 10 minutes helps the flour hydrate, creating a softer interior. For more flavor, add diced jalapeños or cheddar cheese.
