This is the kind of bread you bake when you want something homemade now.

Yield and Timing

Makes 1 loaf (8–10 slices).
Prep time 10 minutes · Bake time 45–50 minutes.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (or thyme/rosemary mix)
  • 1½ cups shredded cheese (cheddar, Gruyère, or cheddar–mozzarella blend)
  • 1 cup milk
  • 2 large eggs
  • ¼ cup olive oil or melted butter

Optional add-ins (still simple):

  • Chopped fresh chives or parsley
  • A pinch of paprika or red pepper flakes

Preparation

Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

In a large bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and dried herbs. Stir in the shredded cheese, coating it lightly with the flour mixture.

In a separate bowl, whisk together the milk, eggs, and olive oil (or melted butter).

Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix—the batter should be thick and slightly lumpy.

Transfer the batter to the prepared loaf pan and smooth the top.

Bake for 45–50 minutes, or until the loaf is golden and a toothpick inserted into the center comes out clean.

Let cool in the pan for 10 minutes, then remove and cool slightly before slicing.

Serving Suggestions

Serve Herb & Cheese Quick Bread warm with butter, alongside soup or stew, or as a savory breakfast slice with eggs. It’s also excellent toasted and topped with a little honey butter or cream cheese.

Storage

Wrap the loaf tightly and store at room temperature for up to 2 days, or refrigerate for up to 4 days. It reheats beautifully and can be frozen for longer storage.
