- 2 large eggs
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt

Preparation
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
If using fresh cauliflower, pulse cauliflower florets in a food processor until rice-like in texture.
Microwave cauliflower rice for 3–4 minutes, then place in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, combine cauliflower rice, chopped spinach, mozzarella, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
Mix until everything is well combined.
Divide mixture into 6 portions and place on the prepared baking sheet.
Flatten each portion into a thin circle about 6 inches wide, shaping them like tortillas.
Bake for 15 minutes, until set and lightly golden.
Remove from oven and carefully drape each shell over the side of a bowl or rack to form a taco shape. Return to oven for 5–10 minutes until slightly crisp.
