Ingredients
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack or pepper jack
- 8 oz cream cheese, softened
- 1 cup mayonnaise
- 1 (4 oz) jar diced pimentos, drained
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- ¼ teaspoon black pepper
- Pinch of cayenne (optional)
- Sliced green onions for topping (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix cream cheese, mayo, and seasonings until smooth.
- Fold in cheddar, jack cheese, and pimentos.
- Spread mixture into a baking dish.
- Bake 20–25 minutes, until bubbly and golden around the edges.
- Top with green onions and serve warm with crackers, celery sticks, tortilla chips, or toasted bread.
