Best Ever Easy Vegetable Beef Soup

Ingredients

  • 1 lb ground beef (or stew meat)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup green beans (fresh, canned, or frozen)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • Optional: a dash of hot sauce or cayenne for warmth

Instructions

  1. In a large pot, brown the ground beef with onions and garlic. Drain any excess fat.
  2. Add carrots, potatoes, corn, peas, green beans, diced tomatoes, tomato sauce, and beef broth.
  3. Stir in Worcestershire, salt, pepper, paprika, and thyme.
  4. Bring to a boil, reduce heat, and let it simmer 35–45 minutes, or until vegetables are tender.
  5. Taste and adjust seasoning. Serve hot with cornbread or crackers.
