Ingredients
- 1 lb ground beef (or stew meat)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup frozen corn
- 1 cup frozen peas
- 1 cup green beans (fresh, canned, or frozen)
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- Optional: a dash of hot sauce or cayenne for warmth
Instructions
- In a large pot, brown the ground beef with onions and garlic. Drain any excess fat.
- Add carrots, potatoes, corn, peas, green beans, diced tomatoes, tomato sauce, and beef broth.
- Stir in Worcestershire, salt, pepper, paprika, and thyme.
- Bring to a boil, reduce heat, and let it simmer 35–45 minutes, or until vegetables are tender.
- Taste and adjust seasoning. Serve hot with cornbread or crackers.
