Betty Crocker’s Cheese Sandwich Casserole

This vintage recipe comes straight out of old-school Betty Crocker cookbooks. It’s a clever way to turn everyday cheese sandwiches into a hearty casserole, perfect for feeding a family on a budget. With layers of buttered bread, sharp cheese, and a creamy egg mixture, it bakes up golden and bubbly, making it the ultimate nostalgic comfort food.


Ingredients (Serves 6–8)

  • 12 slices of sandwich bread (white or whole wheat)
  • 6 slices American cheese (or cheddar)
  • 3 tablespoons butter, softened
  • 4 large eggs
  • 2 cups milk
  • 1 teaspoon dry mustard (optional, for flavor)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Paprika (for garnish)

Instructions

  1. Make sandwiches: Butter each slice of bread lightly. Place cheese between two slices to make 6 sandwiches. Cut sandwiches diagonally into halves or quarters.
  2. Arrange in dish: Place sandwiches in a greased 9×13-inch casserole dish, layering as needed.
  3. Prepare custard: In a bowl, whisk together eggs, milk, mustard, salt, and pepper until smooth.
  4. Pour over sandwiches: Evenly pour the egg mixture over the layered sandwiches, making sure everything is soaked.
  5. Chill (optional): For best texture, cover and refrigerate for 1–2 hours (or overnight).
  6. Bake: Preheat oven to 350°F (175°C). Bake uncovered for 35–40 minutes, until golden brown and set in the middle.
  7. Serve: Sprinkle lightly with paprika and serve warm.
