Ingredients
For the casserole:
- 1 (16 oz) can refrigerated biscuits (or 8 homemade biscuits, baked and halved)
- 1 lb (450g) breakfast sausage (pork or turkey)
- 8 large eggs
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper, to taste
For the gravy:
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- Salt and black pepper, to taste
- Optional: pinch of cayenne or crushed red pepper for heat
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the sausage: In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Do not drain the fat.
- Make the gravy: Sprinkle the flour over the sausage and stir well to coat. Cook for 1–2 minutes. Slowly whisk in the milk and stir continuously until the gravy thickens (about 5–7 minutes). Season with salt, pepper, and a pinch of cayenne if using. Remove from heat.
- Prepare the eggs: In a large bowl, whisk together the eggs, 1/2 cup milk, salt, and pepper. Set aside.
- Assemble the casserole:
- Cut the biscuits into quarters and spread them evenly on the bottom of the prepared baking dish.
- Pour the scrambled egg mixture over the biscuits.
- Sprinkle with half the cheese.
- Pour the sausage gravy evenly over everything.
- Top with the remaining cheese.
- Bake for 35–40 minutes, or until the eggs are set and the top is golden and bubbly.
- Cool and serve: Let the casserole rest for 5–10 minutes before slicing. Serve warm with fresh fruit or hot sauce on the side if desired.
