These are perfect for parties, showers, or afternoon tea! Bite-sized chicken salad croissants are elegant, easy to eat, and always a crowd-pleaser.
Ingredients:
For the chicken salad:
- 3 cups cooked chicken, finely diced
- 1/2 cup mayonnaise
- 1/4 cup finely diced celery
- 2 tablespoons finely diced red onion
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 cup dried cranberries or grapes, chopped (optional)
- 2 tablespoons fresh herbs (dill, tarragon, or parsley)
- Salt and pepper to taste
- 1/4 cup toasted pecans or almonds, chopped (optional)
For assembly:
- Mini croissants (about 24)
- Lettuce leaves, torn into small pieces
Instructions:
In a large bowl, combine the diced chicken, mayonnaise, celery, red onion, lemon juice, and Dijon mustard. Mix well until everything is evenly coated. Fold in the cranberries or grapes and nuts if using, along with the fresh herbs. Season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes to let the flavors meld.
Slice the mini croissants in half horizontally. Place a small piece of lettuce on the bottom half of each croissant. Spoon about 1-2 tablespoons of chicken salad onto the lettuce. Place the top half of the croissant on top and arrange on a serving platter.
Tips:
- You can use rotisserie chicken to save time
- Make the chicken salad the day before and assemble just before serving to keep the croissants from getting soggy
- For variety, try adding curry powder for a curried chicken salad version
- Secure with decorative toothpicks if you’re worried about them sliding apart
