Introduction

Quick, budget-friendly, and surprisingly delicious, this cabbage and eggs stir-fry is a humble dish packed with flavor and nutrition. With tender cabbage, soft scrambled eggs, and a savory seasoning blend, it’s perfect as a light meal, side dish, or a satisfying lunch with rice or noodles.


Ingredients (Serves 2–3)

  • 1/2 head of green cabbage, thinly sliced
  • 3 large eggs
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 1 tablespoon soy sauce (or to taste)
  • Salt and black pepper, to taste
  • Optional: green onions, chili flakes, or sesame oil for garnish

Instructions

  1. Prepare the eggs: Crack the eggs into a bowl and whisk until smooth. Add a pinch of salt.
  2. Cook the eggs: Heat half the oil in a large skillet or wok over medium heat. Pour in the eggs and scramble until just set. Remove and set aside.
  3. Sauté the cabbage: In the same skillet, add the remaining oil. Sauté the minced garlic for about 30 seconds, then add the cabbage. Stir-fry for 5–7 minutes until it softens slightly but retains some crunch.
  4. Season: Add the soy sauce, a pinch of salt, and black pepper. Stir well to coat the cabbage.
  5. Combine and finish: Return the scrambled eggs to the pan and gently mix with the cabbage. Cook for another 1–2 minutes until everything is heated through.
  6. Serve hot, optionally topped with sliced green onions or a drizzle of sesame oil.
