Quick, budget-friendly, and surprisingly delicious, this cabbage and eggs stir-fry is a humble dish packed with flavor and nutrition. With tender cabbage, soft scrambled eggs, and a savory seasoning blend, it’s perfect as a light meal, side dish, or a satisfying lunch with rice or noodles.
Ingredients (Serves 2–3)
- 1/2 head of green cabbage, thinly sliced
- 3 large eggs
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 tablespoon soy sauce (or to taste)
- Salt and black pepper, to taste
- Optional: green onions, chili flakes, or sesame oil for garnish
Instructions
- Prepare the eggs: Crack the eggs into a bowl and whisk until smooth. Add a pinch of salt.
- Cook the eggs: Heat half the oil in a large skillet or wok over medium heat. Pour in the eggs and scramble until just set. Remove and set aside.
- Sauté the cabbage: In the same skillet, add the remaining oil. Sauté the minced garlic for about 30 seconds, then add the cabbage. Stir-fry for 5–7 minutes until it softens slightly but retains some crunch.
- Season: Add the soy sauce, a pinch of salt, and black pepper. Stir well to coat the cabbage.
- Combine and finish: Return the scrambled eggs to the pan and gently mix with the cabbage. Cook for another 1–2 minutes until everything is heated through.
- Serve hot, optionally topped with sliced green onions or a drizzle of sesame oil.
