Ingredients
- 2 lbs (900g) potatoes (Yukon Gold or Russet), peeled and cubed
- ½ cup milk (warm)
- ¼ cup unsalted butter
- 1 cup shredded cheddar cheese (or cheese of your choice)
- ½ cup sour cream (optional, for extra creaminess)
- Salt and black pepper, to taste
- Chopped chives or parsley (for garnish, optional)
Instructions
- Boil the Potatoes
Place potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15–20 minutes, or until fork-tender. - Drain and Mash
Drain the potatoes and return them to the pot. Mash with a potato masher or use a hand mixer for extra smoothness. - Add Butter and Milk
Stir in warm milk and butter until the potatoes are creamy and smooth. - Mix in Cheese
Add shredded cheese and mix until fully melted and incorporated. Stir in sour cream if using. - Season and Serve
Season with salt and pepper to taste. Garnish with chopped chives or parsley if desired. Serve hot.
