Cheesy Mashed Potato

Introduction

Ingredients

  • 2 lbs (900g) potatoes (Yukon Gold or Russet), peeled and cubed
  • ½ cup milk (warm)
  • ¼ cup unsalted butter
  • 1 cup shredded cheddar cheese (or cheese of your choice)
  • ½ cup sour cream (optional, for extra creaminess)
  • Salt and black pepper, to taste
  • Chopped chives or parsley (for garnish, optional)

Instructions

  1. Boil the Potatoes
    Place potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
  2. Drain and Mash
    Drain the potatoes and return them to the pot. Mash with a potato masher or use a hand mixer for extra smoothness.
  3. Add Butter and Milk
    Stir in warm milk and butter until the potatoes are creamy and smooth.
  4. Mix in Cheese
    Add shredded cheese and mix until fully melted and incorporated. Stir in sour cream if using.
  5. Season and Serve
    Season with salt and pepper to taste. Garnish with chopped chives or parsley if desired. Serve hot.
