Cheesy Potato and Smoked Sausage Casserole

Ingredients (Serves 6–8)

  • 1 lb (450g) smoked sausage, sliced into 1/4-inch rounds
  • 3 cups diced or cubed potatoes (peeled or unpeeled)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella (optional, for extra gooeyness)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the sausage:
    In a skillet over medium heat, cook the sliced smoked sausage until browned. Remove from heat and set aside.
  3. Make the cheese sauce:
    In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux. Slowly whisk in the milk and stir constantly until the sauce thickens (about 3–5 minutes). Remove from heat and stir in cheddar cheese, garlic powder, salt, and pepper until smooth and melted.
  4. Assemble the casserole:
    In the prepared baking dish, layer the potatoes and cooked sausage. Pour the cheese sauce over the top, spreading it evenly. Sprinkle with mozzarella if using.
  5. Bake:
    Cover the dish with foil and bake for 35–40 minutes, or until the potatoes are tender. Remove the foil and bake for an additional 10–15 minutes to brown the top.
  6. Cool and serve:
    Let the casserole rest for 5 minutes before serving. Garnish with chopped green onions or parsley, if desired.
