Cinnamon French Toast Roll-Ups

Ingredients:
10 slices white sandwich bread.
3 tablespoons butter, melted.
¼ cup brown sugar.
1 teaspoon ground cinnamon.
2 eggs.
¼ cup milk.
½ teaspoon vanilla extract.
Pinch of salt.
Optional fillings: cream cheese, Nutella, peanut butter, or fruit preserves.
Optional coating: powdered sugar or extra cinnamon sugar.

Instructions:
Trim the crusts from the bread slices and flatten each slice with a rolling pin until thin and pliable. If using a filling, spread a thin layer over each slice, leaving a small border around the edges. Roll each slice tightly into a log and set aside.

In a small bowl, mix the brown sugar and cinnamon together. Brush each rolled piece lightly with melted butter, then roll them in the cinnamon-sugar mixture to coat evenly.

In another bowl, whisk together the eggs, milk, vanilla extract, and salt until smooth. Heat a non-stick skillet over medium heat and lightly grease it with butter.

Dip each roll-up quickly into the egg mixture, making sure all sides are coated but not soaked. Place them seam-side down in the hot skillet. Cook, turning gently, until all sides are golden brown and the bread is cooked through, about 2–3 minutes per side.

Remove from the skillet and serve warm. Dust with powdered sugar or drizzle with maple syrup if desired. These are best enjoyed fresh while warm and slightly crisp on the outside with a soft, sweet center.
