CLASSIC POTATO PANCAKES

Ingredients

  • 4–5 medium potatoes, peeled
  • 1 small onion
  • 2 eggs
  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Oil for frying
  • Optional: garlic powder, parsley, or shredded cheese

Instructions

  1. Grate the potatoes and onion using the large holes of a grater.
  2. Place mixture in a towel and squeeze out as much moisture as possible (this makes them crispy).
  3. Transfer to a bowl and mix in eggs, flour, salt, and pepper.
  4. Heat oil in a skillet over medium-high heat.
  5. Scoop small portions of the mixture into the pan and press lightly to flatten.
  6. Fry 3–4 minutes per side until crisp and golden brown.
  7. Drain on paper towels.
  8. Serve warm with sour cream or applesauce.
