Ingredients
- 4–5 medium potatoes, peeled
- 1 small onion
- 2 eggs
- ¼ cup flour
- 1 teaspoon salt
- ½ teaspoon black pepper

Instructions
- Grate the potatoes and onion using the large holes of a grater.
- Place mixture in a towel and squeeze out as much moisture as possible (this makes them crispy).
- Transfer to a bowl and mix in eggs, flour, salt, and pepper.
- Heat oil in a skillet over medium-high heat.
- Scoop small portions of the mixture into the pan and press lightly to flatten.
- Fry 3–4 minutes per side until crisp and golden brown.
