2. Prepare the coconut topping
- In another bowl, whisk eggs + sugar together.
- Add vanilla, salt, flour, then fold in the shredded coconut.
- Pour this mixture over the warm crust.
3. Bake the bars
- Return to the oven and bake 25–28 minutes, until top is golden and edges are set.
- Cool completely before cutting into squares.
- For extra flavor: sprinkle warm bars with a little extra coconut on top.
