Preparation

Make the Batter

In a mixing bowl, whisk together the eggs and milk.

Add flour, melted butter, sugar, and salt. Whisk until the batter is smooth and slightly thin.

For best texture, let the batter rest for 15–20 minutes.


Cook the Crepes

Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.

Pour about ¼ cup batter into the center of the pan. Quickly swirl the pan so the batter spreads into a thin circle.

Cook for 1–2 minutes until the edges begin to lift and the bottom is lightly golden.

Flip carefully and cook the other side for 30–45 seconds.

Transfer to a plate and repeat with remaining batter.
