Garden Vegetable Spread

Ingredients

  • 8 oz cream cheese, softened
  • ½ cup mayonnaise or sour cream
  • 1 small carrot, finely grated
  • ½ cup finely chopped cucumber (seeds removed)
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped bell pepper (any color)
  • 2 green onions, sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • Optional: fresh dill or parsley

Instructions

  1. In a bowl, beat together cream cheese and mayo until smooth.
  2. Add carrot, cucumber, celery, bell pepper, and green onions.
  3. Stir in garlic powder, onion powder, salt, pepper, and herbs if using.
  4. Mix until everything is well combined.
  5. Chill at least 1 hour to let flavors blend.
  6. Serve with crackers, veggies, bagels, or as a sandwich spread.
