John Wayne Casserole

John Wayne Casserole is a hearty, old-fashioned Southwestern bake that’s bold, comforting, and perfect for feeding a crowd. It’s built in layers: a biscuit-style crust, seasoned beef, fresh vegetables, and a rich, cheesy topping that bakes up golden and satisfying. This is the kind of dish that feels right at home on a family table or church potluck.

Ingredients come together simply. You’ll need ground beef, onion, taco seasoning, canned diced tomatoes with green chiles, cheddar cheese, Monterey Jack cheese, sour cream, mayonnaise, and a refrigerated biscuit dough (or homemade biscuit base). Optional add-ins like bell peppers or jalapeños deepen the flavor if you like a little heat.

Preparation starts by pressing the biscuit dough into the bottom of a greased baking dish to form the crust. Brown the ground beef with onion, drain excess fat, then stir in the taco seasoning and tomatoes with chiles. Spread this mixture evenly over the crust, followed by a layer of sliced vegetables if using. In a separate bowl, mix sour cream, mayonnaise, and the cheeses, then spread this creamy topping over everything.

Baking is done in a preheated oven at 350°F (180°C) until the casserole is bubbly and the top is lightly browned, usually about 30–35 minutes. Let it rest for a few minutes before slicing so the layers hold together nicely.

Why it works is in the contrast of textures and flavors. The soft biscuit base absorbs the savory beef juices, the vegetables add freshness, and the cheesy topping brings richness without being heavy. It’s filling, nostalgic, and unapologetically comforting.

Serving ideas are simple. Pair it with a crisp green salad, coleslaw, or just a side of pickles. Leftovers reheat beautifully, making it a reliable make-ahead meal for busy days.

Enjoy !!
