Lemon Truffles

simple, creamy, bright Lemon Truffles that taste like little bites of sunshine.

Ingredients

  • 2 cups white chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • Zest of 2 lemons
  • 1 tablespoon fresh lemon juice
  • Powdered sugar OR crushed vanilla cookies (for coating)

Instructions

  1. Make the lemon ganache:
    In a saucepan, heat the heavy cream and butter until just simmering.
    Pour over white chocolate chips in a bowl. Let sit 2 minutes.
  2. Add lemon flavor:
    Stir until smooth. Mix in lemon zest + lemon juice.
  3. Chill:
    Cover and refrigerate for 1–2 hours until firm enough to scoop.
  4. Form balls:
    Scoop small portions and roll into truffles using your hands.
  5. Coat:
    Roll in:
    • powdered sugar (classic),
    • crushed cookies (more flavor),
    • or shredded coconut for a summer vibe.
  6. Chill again:
    Let the truffles set in the fridge for 20 minutes before serving.

Tips for Perfect Lemon Truffles

  • If too soft → add a handful of melted white chocolate and chill again.
  • For stronger lemon flavor → add ½ teaspoon lemon extract.
  • For a smoother texture → strain out the zest (optional).
  • Store refrigerated up to 1 week.
