Mandarin Lunchbox Salad

A crisp, sweet-savory salad that stays fresh in the fridge and tastes even better the next day. Perfect for meal prep or lunchbox recipes.


Ingredients (2–3 lunchboxes)

For the Salad

  • 3 cups shredded romaine or iceberg lettuce
  • 1 cup shredded red cabbage
  • 1 large carrot, grated
  • 1 cup cooked chicken breast, cubed or shredded (optional)
  • 1/2 cup canned mandarin oranges, drained
  • 2 tablespoons sliced green onions
  • 1/3 cup crispy chow mein noodles OR toasted almonds

For the Dressing

  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil or sesame oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard (optional)
  • Salt & pepper to taste

🍽️ Instructions

  1. In a large bowl, mix lettuce, red cabbage, carrots, and chicken (if using).
  2. Add mandarin oranges gently to avoid breaking them.
  3. Whisk together all dressing ingredients until smooth.
  4. Drizzle dressing over the salad and toss lightly.
  5. Add chow mein noodles or almonds just before eating to stay crunchy.
  6. Portion into lunchbox containers and store in the fridge up to 2 days.
