No-Bake Chocolate PB Balls

Soft, creamy peanut butter centers coated in smooth melted chocolate — like homemade Reese’s truffles!


Ingredients

  • 1 cup creamy peanut butter
  • ½ cup (1 stick) unsalted butter, softened
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 2 cups chocolate chips (milk or semi-sweet)
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)

Optional extras:

  • ½ cup crushed graham crackers
  • ¼ cup chopped peanuts for dipping

Instructions

1. Make the Peanut Butter Filling

  1. In a mixing bowl, beat together:
    • peanut butter
    • softened butter
    • vanilla
  2. Add powdered sugar slowly until a smooth, dough-like mixture forms.
  3. If the dough is too soft, add a little more powdered sugar.
  4. Roll into 1-inch balls and place on a parchment-lined tray.

Freeze for 20–25 minutes to firm them up.


2. Melt the Chocolate

In a microwave-safe bowl, melt:

  • chocolate chips
  • coconut oil/shortening

Heat in 20–30 second intervals, stirring in between until smooth.


3. Dip the PB Balls

  1. Remove PB balls from freezer.
  2. Dip each one into melted chocolate using a fork or skewer.
  3. Place back onto parchment.
  4. Add sprinkles, chopped peanuts, or sea salt if desired.

4. Chill

Refrigerate for 20 minutes or until chocolate is fully set.
