No Bake Coconut Cream Dessert Bars

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • ¼ cup sugar

Coconut Cream Layer

  • 2 cups heavy cream or cold whole milk
  • 1 (3.4 oz) box coconut cream pudding mix
  • 1 (8 oz) block cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup shredded sweetened coconut

Topping

  • 8 oz Cool Whip or homemade whipped cream
  • Toasted coconut for garnish

Instructions

  1. Make the crust:
    Mix graham crumbs, melted butter, and sugar. Press firmly into an 8×8 or 9×9 dish. Chill.
  2. Make the coconut cream layer:
    • Whisk cream/milk with the pudding mix until thick.
    • In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
    • Fold pudding into the cream cheese mixture.
    • Stir in shredded coconut. Spread over the crust.
  3. Add topping:
    Spread Cool Whip over the coconut layer.
    Sprinkle with toasted coconut.
  4. Chill at least 4 hours, or overnight for perfect slices.
