Ingredients
Crust
- 2 cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
Coconut Cream Layer
- 2 cups heavy cream or cold whole milk
- 1 (3.4 oz) box coconut cream pudding mix
- 1 (8 oz) block cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla
- 1 cup shredded sweetened coconut
Topping
- 8 oz Cool Whip or homemade whipped cream
- Toasted coconut for garnish
Instructions
- Make the crust:
Mix graham crumbs, melted butter, and sugar. Press firmly into an 8×8 or 9×9 dish. Chill. - Make the coconut cream layer:
- Whisk cream/milk with the pudding mix until thick.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold pudding into the cream cheese mixture.
- Stir in shredded coconut. Spread over the crust.
- Add topping:
Spread Cool Whip over the coconut layer.
Sprinkle with toasted coconut. - Chill at least 4 hours, or overnight for perfect slices.
