Introduction
Oklahoma Fried Onion Burgers are a down-home classic packed with flavor and crispy edges. Thinly smashed beef patties are cooked directly on top of a mound of sizzling onions, creating a sweet, caramelized crust that melts into the meat. Add gooey cheese, a soft bun, and your favorite condiments—and you’ve got a diner-style burger like no other.
Ingredients (Makes 4 burgers)
- 1 lb (450g) ground beef (80/20 preferred)
- 1 large yellow onion, thinly sliced
- 4 slices American or cheddar cheese
- 4 hamburger buns
- Salt and black pepper, to taste
- 1 tablespoon butter or oil (for toasting buns)
- Optional toppings: pickles, mustard, mayo, ketchup
Instructions
- Prep the onions:
Thinly slice the onion and toss with a pinch of salt. Let sit for 5–10 minutes to draw out moisture, then pat dry with paper towels. - Form the patties:
Divide ground beef into 4 loosely packed balls (don’t overwork). Flatten slightly. - Heat the skillet:
Preheat a cast-iron skillet or griddle over medium-high heat. No oil is needed unless your pan is dry. - Cook the onions and smash the burgers:
Place a small pile of onions (about 1/4 cup) onto the hot skillet. Immediately place a beef ball on top of the onions and use a spatula (with parchment paper if needed) to press it down thin. Season with salt and pepper. - Let it sizzle:
Cook without moving for about 2–3 minutes, until the edges are brown and crisp. Flip carefully, keeping the onions underneath. Top with cheese and cook another 1–2 minutes. - Toast the buns:
In another pan or on the griddle, toast buns with butter until golden. - Assemble and serve:
Place the cheesy onion burger on a toasted bun. Add your favorite toppings and condiments. Serve hot with fries or chips.
