Here’s a classic Old-Fashioned Oklahoma Nut Candy recipe — rich, buttery, and nostalgic, just like the ones made in Southern kitchens generations ago.
Ingredients
- 2 cups granulated sugar
- 1 cup light corn syrup
- ½ cup water
- 1 tablespoon butter
- 2 cups mixed nuts (pecans, walnuts, or peanuts)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
👩🍳 Instructions
- Prepare Your Workspace
Line a baking sheet with parchment paper or lightly grease it with butter. Have all your ingredients measured and ready — once the syrup reaches temperature, you’ll need to move quickly. - Cook the Syrup
In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.
Once boiling, stop stirring and let the mixture cook until it reaches 270°F (soft crack stage) on a candy thermometer. - Add Butter and Nuts
Stir in the butter and nuts, then continue cooking until the mixture reaches 300°F (hard crack stage). - Finish with Vanilla and Baking Soda
Remove from heat. Quickly stir in vanilla, baking soda, and a pinch of salt. The mixture will foam slightly — that’s what gives the candy its light texture. - Pour and Cool
Immediately pour the hot candy onto the prepared sheet and spread it out evenly.
Allow it to cool completely, then break into pieces.
💡 Tips
- Use fresh, roasted nuts for the best flavor.
- A silicone spatula makes it easier to stir the hot candy mixture.
- Store in an airtight container at room temperature for up to 2 weeks.
Enjoy !!!
