Old-Fashioned Oklahoma Nut Candy

Here’s a classic Old-Fashioned Oklahoma Nut Candy recipe — rich, buttery, and nostalgic, just like the ones made in Southern kitchens generations ago.

Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • ½ cup water
  • 1 tablespoon butter
  • 2 cups mixed nuts (pecans, walnuts, or peanuts)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt

  1. Prepare Your Workspace
    Line a baking sheet with parchment paper or lightly grease it with butter. Have all your ingredients measured and ready — once the syrup reaches temperature, you’ll need to move quickly.
  2. Cook the Syrup
    In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.
    Once boiling, stop stirring and let the mixture cook until it reaches 270°F (soft crack stage) on a candy thermometer.
  3. Add Butter and Nuts
    Stir in the butter and nuts, then continue cooking until the mixture reaches 300°F (hard crack stage).
  4. Finish with Vanilla and Baking Soda
    Remove from heat. Quickly stir in vanilla, baking soda, and a pinch of salt. The mixture will foam slightly — that’s what gives the candy its light texture.
  5. Pour and Cool
    Immediately pour the hot candy onto the prepared sheet and spread it out evenly.
    Allow it to cool completely, then break into pieces.
