Slow Cooker Snowballs

Ingredients

  • 1 (12 oz) bag white chocolate chips
  • 1 (12 oz) bag peanut butter chips or butterscotch chips
  • 1 cup mini marshmallows
  • 2 cups Rice Krispies cereal
  • 1 cup shredded coconut
  • ½ cup chopped peanuts (optional)
  • 1 teaspoon vanilla
  • Powdered sugar for rolling

Instructions

  1. Add white chocolate chips and peanut butter (or butterscotch) chips to the slow cooker.
  2. Cook on LOW for 1 hour, stirring every 20 minutes until smooth.
  3. Stir in vanilla, then fold in marshmallows, Rice Krispies, coconut, and peanuts.
  4. Let mixture cool just enough to handle.
  5. Roll into small balls and dust with powdered sugar to make “snowballs.”
  6. Place on parchment to set. Chill for firmer texture.
